Its a medium grain rice variety that originated and was developed in California. First released to growers in 1948 at the rice experiment station near Biggs , California. It has been the foundational variety of the California rice industry.Its a decent substitute of Arborio rice which is traditionally , used in making risotto but may not be as creamy. Suitable for Japanese dishes like Sushi Rolls(Maki,Nigiri), Rice balls(Onigiri), Rice bowls- Gyudon, Donburi or poke bowls.
