Also called as Cloud ear or Tree ear mushroom .Popularly known for its chewy, jelly like texture. Low in calories, rich in fiber,, minerals,anti oxidant and has uses in Traditional Chinee medicine.
To prepare it : Soak the dried black fungus in warm or room temperature water for 1 to 2 hours until it expands 3 to 4 times and becomes soft. Rinse thoroughly to remove any dirt hidden in folds and trim off tough stems if needed. Boil or blanch the rehydrated fungus for 3 to 5 mins to cook it fully and improve texture, drain and rinse in cold water to stop cooking,then use in stir- fries, soups,salads or cold dishes
