Also known as snow fungus or silver ear fungus is a translucent , white, gelatinous mushroom distinct from black wood ear mushroom.(Auricularia species).Grows on dead broadleaf trees and has a frilly, coral like appearance. Commonly used in sweed soups and dessert soups such as snow fungus soup with pear, lotus seeds and jujubes. It is valued for moisturising and immune supporting properties in Chinese medicine.
How to prepare : Soak the dried white fungus in water until soft, then simmer gently for 30 to 45 minutes or longer to extract its gelatinous texture and flavor.
